Here’s my Baked Mac-n-Cheese recipe. Make it for the coming holidays if you love comfort food!


Margo’s Baked Mac n Cheese


1 stick real butter
1 medium yellow onion, diced
¼ cup (a bit heaping) of all purpose flour
4 cups 2% or whole milk
½ teaspoon salt
¼ teaspoon of pepper
2 ¼ teaspoons of ground mustard
8 oz sharp cheddar cheese, shredded (about 2 cups)
8 oz Colby Monterey Jack cheese, shredded (about 2 cups)
8 oz bag of shredded Parmesan (or Romano) cheese (about
2 cups)
1 pound ziti, rigatoni, or elbow macaroni
Paprika for garnish

Cooking Instructions:

Cook macaroni according to package directions, but 1
minute less. Set them aside but keep them warm (don’t cool
them with water).
Preheat oven to 350. Grease a 9” x 13” baking pan with olive
oil or vegetable oil.

Melt the butter in a large pot on medium heat. Sauté the
chopped onions in the butter for about 5 minutes and cook
until they are tender. Add the flour a little at a time and stir
constantly for about 2-3 minutes. Now add the milk a little at
a time stirring constantly until the mixture starts to become
nice and thick, about 5 minutes. Take the pot off the heat
and add the salt, pepper, and ground mustard. Stir in the
three different cheeses. Follow with the macaroni, being
careful not to break them.

Transfer the mixture to the greased baking dish. Sprinkle the
top with paprika for color and bake for 35 minutes or until the
casserole is somewhat browned and bubbling on top.
Serves 12 as a side dish and 8 as a main dish
